Nobody would believe you created this fried rice in an air fryer since it is so mouthwatering and savory. A fantastic contrast to the chewy core is provided by the abundance of toasted, crunchy rice particles. The bits of peas pop in your mouth, and the shrimp is moist and soft. Sriracha mayo and fresh green onion are the ideal finishing touches to complete it. In the absence of shrimp, you can use leftover chicken or beef.

Ingredients

  • 1/3 cup chopped onion
  • 1 tablespoon canola oil
  • 1/3 cup chopped carrot
  • 1 teaspoon rice vinegar
  • 1 teaspoon kosher salt, divided
  • 2 large eggs, lightly beaten
  • 1 scallion, sliced, or as needed
  • 1 pound large, peeled, deveined raw shrimp
  • 2 (8-ounce) packages pre-cooked microwavable brown rice
  • 3/4 cup frozen green peas
  • 1 tablespoon soy sauce
  • 1/4 teaspoon freshly ground black pepper
  • 1 tablespoon toasted sesame seeds, or as needed (optional)
  • 1/4 cup Sriracha mayonnaise, or as needed

Directions

1. Step

From the air fryer, remove the basket insert. For five minutes, heat the air fryer to 400°F. Stir the onion, carrot, and 1/2 teaspoon of salt into the oily basket holder to incorporate. 5 minutes to cook. Add the eggs and simmer for 3 minutes or until half set.

2. Step

Stir together the egg mixture with the shrimp, rice, peas, soy sauce, vinegar, pepper, and remaining salt. 10 minutes to cook. Stir the mixture, top with sesame seeds if you like, and cook for a further 10 to 15 minutes, or until hot and crunchy. Add Sriracha mayonnaise and scallions, then drizzle.

Instructions

  1. Combine shrimp with salt and cornstarch. Place aside.
  2. Mix the rice, vegetables, onions, sesame oil, salt, and pepper in a 6 x 3 heatproof pan.
  3. Cook for 15 minutes in the Air Fryer at 350 degrees. Halfway through cooking, toss the rice.
  4. Place shrimp on top of rice and cook in Air Fryer at 350° for 5 minutes.
  5. Beat the eggs with salt and pepper as the shrimp cooks. Over the shrimp and rice mixture, pour the eggs, and simmer for an additional five minutes at 350 degrees.
  • Stir the eggs into the shrimp and rice and serve.
