Carrot Orange Soup Recipe
Ingredients :
- Butter 1 tbsp
- Diced carrots 1 cup
- Chopped onion 1
- Grated ginger 1/2 tsp
- Cubed potatoes 1/4 cup
- Vegetable stock(yakhni) 2 cups
- Chopped dill 2- 1/2 tbsp
- Cream 1/4 cup
- Salt and pepper to taste
- Orange juice 1 cup
Method :
Melt butter. Add the carrots, onion, ginger, potatoes, and stock(yakhni), then bring to a boil. Reduce heat, and simmer until potatoes are tender. Strain(channa) liquid into a separate container.
