When you have a pressing task to complete that day, this is the kind of breakfast you should have. Huevos rancheros are not just one of the most delicious breakfast foods ever; their perfect ratio of protein, fiber, and antioxidants will keep you feeling your best all day.

Ingredients

  • Eight eggs
  • One lime’s juice
  • A pinch of cumin
  • 1⁄2 chopped small onion
  • One sliced garlic clove
  • One sixteen-ounce can of whole peeled tomatoes with juice
  • Chop 1 tablespoon of chipotle pepper
  • 1/4 cup of freshly chopped cilantro
  • To taste, add salt and black pepper.
  • One 16-oz can of black beans
  • Eight tortillas made of corn

Recipe Method Step-by-Step

  1. In a food processor, combine the tomatoes, onion, garlic, chipotle, cilantro, and half of the lime juice; pulse until fully mixed, but some chunks remain. Add pepper and salt for seasoning.
  2. In a bowl, combine the black beans, cumin, and remaining lime juice; add salt and pepper to taste. Mash the beans slightly with the back of a fork; if needed, add some heated water.
  • Apply non-stick cooking spray to a large skillet or sauté pan and place it over medium heat. Crack the eggs into the skillet and heat until the yolks are still loose and runny but the whites have set.
  • Heat a medium-sized skillet over medium heat on a different burner. Add the tortillas, two at a time, and cook for one minute on each side, or until gently toasted.
  • Spread the beans onto the tortillas, place the eggs on top, then top the eggs with the salsa to assemble the dish. If desired, garnish with additional cilantro and serve right away.
  • Tips

    We freely admit to being completely smitten with chipotle pepper, but you will too when you realize how flavorful it can be in an instant. Adobo, a fiery and vinegary tomato sauce, is typically canned with jalapeños that have been smoked to make chilipotles.

    As many recipes as possible will ask for chipotles, so here’s what you do: Purchase a can, add everything to a food processor or blender, and pulse.

    Add a spoonful to soups, mashed potatoes, marinades, and salsas. In addition to being incredibly tasty, chipotle’s capsaicin has been demonstrated to increase metabolism.
