INGREDIENTS
- 3 cups sliced mixed mushrooms
- 1 ¾ cups sliced mixed peppers (I used shishito, red, jalapeno)
- 1 cup diced sweet onion
- 2 tsp chopped garlic
- ½ tsp sea salt , optional
- 1 ¼ cups chickpeas(white chne) , rinsed and drained
- ¼ cup chopped cilantro(parsly or dhnia)
- 2-3 tbsp red curry paste
- 2 ¼ cups light coconut milk
- 2 ¼ cup veggie broth(yakhni)
- 1 tsp fresh lime juice(lemon juice)
- 4 cups mix greens or veges
- Salad hack:
- 4 cups mix greens or veges
2 tsp rice vinegar1-2 tsp sesame oil (till oil) 1 tsp lime juice(lemon juice)½ tsp crushed red pepper¼ tsp sea salt
INSTRUCTIONS
- Saute the mushrooms, peppers, onion, garlic and salt in a soup pot with a drizzle of oil or broth until soft. About 7-8 minutes.
- Add in the chickpeas,cilantro and curry paste. Cook 2-3 minutes until everything is mixed well.
- Add in the coconut milk, broth and lime. Bring to a boil. About 5 minutes.
Add in the greens or vegen, stir to wilt them.Serve!
For Salad Hack:
- Add the ingredients into the greens container with the greens.
- Cover and shake well.
- Serve!
