Are these the industrial size poles that are 1″ so I can use shelves I already own?

Yes, these are 1″ poles. I was on a search for the 1″ poles because they make it much sturdier. The Amazon basics 5 shelf has 1″ poles. I was quite surprised as I had ordered another under the Apollo brand that had the .75 poles that were not as sturdy.

Can you remove a shelf? Would like to add trash can at the bottom

I would place lower shelf all the way to the bottom and set trash can on it then place other shelves where you want. This would keep shelving unit stable. If you need to leave one shelf off keep it and the plastic brackets in case you want to add later.
