This Fiesta casserole is not only tasty, but it’s also really simple to whip together at the last minute. This is one full meal you won’t have to get up extra early to make thanks to a few shortcuts like utilizing premade biscuits and frozen vegetables.

Begin by cutting the chilled biscuits into quarters and equally placing them in the bottom of the casserole dish. Cornbread biscuits are called for in the recipe, but they can be difficult to come by in a can. Regular buttermilk biscuits will suffice.

INGREDIENTS:
  • 1 can refrigerated corn biscuits
  • 1/4 tsp ground cumin(zeera powder)
  • 3 cups frozen mixed veggies
  • 1/4 tsp chili powder
  • 3/4 cup shredded Monterey Jack cheese
  • 1/4 tsp garlic powder
  • 3/4 cup shredded cheddar cheese
  • 8 eggs
  • 3/4 cup milk
  • 1/8 tsp cayenne pepper(hot chili pepper)
  • 1/4 tsp onion powder
  • 1/2 cup salsa
  • Salt & pepper to taste
INSTRUCTION:
  • Directions: Preheat oven to 350°. Spray a 9×13 baking dish with cooking spray.

  • Cut biscuits into quarters and arrange evenly in the baking dish. Layer frozen vegetables and shredded cheeses on top of the biscuits and set aside.
  • Whisk together eggs, milk, and seasonings(msala jat). Further, Pour mixture over the biscuits and top with salsa.
  • Bake, uncovered for 35-45 minutes. After that serve with cilantro(dhnia), salsa, sour cream, or other your favorite toppings.
