However, this dish keeps to the traditional healthy vegetable-based soup recipe. The manchow recipe can be created with a variety of ingredients and sauces.

Manchow Soup Recipe

Ingredients

For fried noodles:

  • 4 cup water
  • 1 tsp salt
  • 1 tsp oil
  • 1 pack of Hakka noodles
  • 1 tsp cornflour
  • oil (for frying)


For soup:

  • 2 tbsp oil
  • 1-inch ginger (finely chopped)
  • 2 clove garlic (finely chopped)
  • 2 chilli (finely chopped)
  • ½ onion (finely chopped)
  • ½ carrot (finely chopped)
  • 3 tbsp cabbage (finely chopped)
  • ½ capsicum (finely chopped)
  • 5 beans (finely chopped)
  • 2 tbsp coriander stem (chopped)
  • 4 cup water
  • ¾ tsp salt
  • 2 tbsp soy sauce
  • 2 tbsp vinegar
  • ½ tsp pepper powder
  • 1 tsp chilli sauce
  • 1 tsp cornflour
  • ¼ cup water (for slurry)
  • 2 tbsp coriander (finely chopped)

Instruction

Fried noodles preparation:

  1. First, prepare the fried noodles by combining 4 cups of water, 1 teaspoon of salt, and 1 teaspoon of oil in a big pot.
  2. Break in 1 pack of Hakka noodles after the water has boiled.
  3. To determine the cooking time, boil for 5 minutes or consult the package directions.
  4. without overcooking, cook the noodles until they are al dente.
  5. To stop the cooking process, drain the noodles and give them a cold water rinse.
  6. now gently combine 1 teaspoon of cornflour.
  7. Noodles are evenly spread and deep-fried in hot oil.
  8. While keeping the flame on medium, stirring occasionally.
  9. Fry the noodles on both sides until they become crunchy.
  10. Last but not least, rinse the crispy noodles and set them aside.

Manchow Soup Preparation:

  1. First, heat 2 tbsp of oil in a big Kadai and add 1 inch of ginger, 2 cloves of garlic, and 2 chillies.
  2. Likewise, sauté 12 onion until it starts to significantly shrink.
  3. the remaining ingredients are 1/2 carrot, 3 tbsp cabbage, 1/2 capsicum, 5 beans, and 2 tbsp coriander stem.
  4. Without overcooking them, stir-fried them for one minute.

  6. now add 1/4 teaspoon of salt and 4 cups of water. Mix well.
  7. Boil until each flavour has fully assimilated.
  8. Currently, add 2 tablespoons each of soy sauce, vinegar, pepper powder, and chilli sauce. Mix well.
  9. 1 tsp of cornstarch should be combined with 1/4 cup of water in a small bowl.
  10. Add the cornflour slurry and well whisk.
  11. Stir and boil the soup until it slightly thickens and becomes glossy.
  12. Now add 2 tablespoons of coriander and stir well.
