Ingredients for Scrapple:

  • 1 pound pork scraps (such as trimmings from pork shoulder or ham)
  • 8 cups water
  • 1 1/2 cups cornmeal
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon sage

Instructions:

  1. In a large pot, combine the pork scraps and water. Bring to a boil, then reduce the heat to low and simmer for 2-3 hours, until the pork is very tender.
  2. Remove the pork from the pot and set it aside to cool. Strain the cooking liquid through a fine-mesh strainer and discard any solids.
  • Return the cooking liquid to the pot and bring it to a boil. Gradually whisk in the cornmeal, salt, black pepper, and sage, stirring constantly to prevent lumps from forming.
  • Reduce the heat to low and continue to cook the mixture, stirring frequently, for about 10-15 minutes, until it becomes thick and porridge-like in consistency.
  • Shred the cooked pork into small pieces and stir it into the cornmeal mixture.
  • Pour the mixture into a greased loaf pan and smooth the surface with a spatula. Cover the pan with plastic wrap and chill it in the refrigerator for at least 2 hours, or until it is firm and set.
  • Preheat the oven to 350°F. Cut the scrapple into 1/2-inch slices and fry them in a little oil over medium heat until they are browned and crispy on both sides.
  • Serve the scrapple hot with your favorite breakfast sides, such as eggs and toast.
