Thai Chicken Meatballs With Peanut Sauce
INGREDIENTS:
For Meatballs:
- Chicken mince 300gm
- Green onions chopped 4
- Coriander (hra dhnia)chopped 1/4 cup
- Fish sauce 1 tbsp
- Red curry paste 1 tbsp
- Bread crumbs 1 cup
- Egg 1
- Salt & pepper to taste
For Peanut Sauce:
- Sesame oil(till oil) 1 tbsp
- Red curry paste 1 tbsp
- Coconut milk 1 cup
- Peanut butter 2 tbsp
- Brown sugar 1 tbsp
- Red pepper flakes 1/4 tsp
- Salt to taste
- Rice to serve
METHOD:
Preheat oven. Place paper over a baking sheet. In a medium bowl mix all the ingredients for the meatballs together well. Form the meatballs into small 1-inch balls. Place meatballs on the prepared baking sheet and bake for about 30 minutes or until done. For curry Heat the oil in a saucepan. Add the red curry paste and cook for a couple of minutes. Add the remaining ingredients, stir and cook for about 5 minutes. Add meatballs to the sauce and toss so that the meatballs are fully coated. Garnish with coriander. Serve with rice.
