Vegan Coconut Curry Soup and Salad Hack

INGREDIENTS

  • 3 cups sliced mixed mushrooms
  • 1 ¾ cups sliced mixed peppers (I used shishito, red, jalapeno)
  • 1 cup diced sweet onion
  • 2 tsp chopped garlic
  • ½ tsp sea salt , optional
  • 1 ¼ cups chickpeas(white chne) , rinsed and drained
  • ¼ cup chopped cilantro(parsly or dhnia)
  • 2-3 tbsp red curry paste
  • 2 ¼ cups light coconut milk
  • 2 ¼ cup veggie broth(yakhni)
  • 1 tsp fresh lime juice(lemon juice)
  • 4 cups mix greens or veges
  • Salad hack:
  • 4 cups mix greens or veges

  • 2 tsp rice vinegar
  • 1-2 tsp sesame oil (till oil)
  • 1 tsp lime juice(lemon juice)
  • ½ tsp crushed red pepper
  • ¼ tsp sea salt

INSTRUCTIONS 

  • Saute the mushrooms, peppers, onion, garlic and salt in a soup pot with a drizzle of oil or broth until soft. About 7-8 minutes.
  • Add in the chickpeas,cilantro and curry paste. Cook 2-3 minutes until everything is mixed well.
  • Add in the coconut milk, broth and lime. Bring to a boil. About 5 minutes.

  • Add in the greens or vegen, stir to wilt them.
  • Serve!

For Salad Hack:

  • Add the ingredients into the greens container with the greens.
  • Cover and shake well.
  • Serve!
