Denver Omelet

A departure from the French omelet, the Denver omelet is prized for its crispier texture and sweet, caramelized taste. When I was a line cook in high school, it was one of the first meals I learned how to prepare professionally. Top it up with toasted bread and arugula salad for a complete lunch or dinner.

Ingredients

  • 3 Big eggs
  • 1 Spoonful of butter
  • 1/4 cup chopped smoked ham
  • 2 teaspoons of finely chopped onion
  • 2 Tsp finely chopped green bell pepper
  • To taste, add salt and freshly ground black pepper.
  • ⅓ Cup of cheddar cheese, shredded
  • 1 Cayenne pepper pinch

Instructions

Step. 1

In a small bowl, beat eggs just until blended; do not beat too much.

Step. 2

In a skillet over medium-high heat, melt the butter. Add the bell pepper, onion, and ham; season with the salt and pepper. Stir and cook for about 5 minutes, or until onions are tender and ham is starting to caramelize.

Step. 3

After lowering the heat to medium-low, add the eggs. Shake the pan while using a spatula to quickly mix the ingredients so they are uniformly spread. Move the spatula quickly along the omelet’s edges. Over the omelet, sprinkle cayenne pepper and cheddar cheese.

Step. 4

Cook for about 5 minutes, shaking the pan occasionally, or until the top is still moist but not runny. Fold the omelet in half with a spatula and place it on a plate.
