Ingredients:

  • Eggs 5
  • Onions finely(barik) chopped 3
  • Tomato chopped 1
  • Ginger paste 1 tsp
  • Garlic paste 1 tsp
  • Green chilies chopped 2
  • Coriander(dhnia) chopped 2 tbsp
  • Mint leaves (podina)1 tbsp
  • Red chilli powder 1 tbsp
  • Cumin(zeera) powder 1 tsp
  • Coriander(dhnia) powder 1 tsp
  • Turmeric (hldi)powder 1/2 tsp
  • Oil 2 tbsp
  • Toast to serve

Method:
Fry onions golden brown in hot oil. Add ginger and garlic pastes and green chilies. Sauté for 30 seconds and add all the dry spices. Add tomato. Let it cook and then add the beaten eggs. Continuously stir not letting it stick to the bottom or solidify too much. The akuri should be of a soft consistency. Lastly, add in mint and coriander leaves and serve with hot toast.
