It’s simple to create and fun to serve this recipe for chicken salad. You can add lettuce and tomato to your sandwich or just eat it simply.

I poach chicken breasts and prepare the chicken salad while they’re still warm when I want to put extra work into my chicken salad. But that’s a very different kind of chicken salad than this one, which focuses on a quick pantry dinner.

Since he was around 6 or 7, my kid has prepared this canned chicken salad on his own because it is so simple. In fact, if I hadn’t prepared leftovers for him, this might have been his go-to school lunch option.

Due to its gluten-free status, I am able to serve it to the friends of my children who have dietary limitations. In fact, rather than eating it as a sandwich, I frequently prefer it on top of a rice cake.

Of course, we also consume this chicken salad as a sandwich on bread, sometimes with toasting and sometimes without. My kids prefer it plain, but I prefer it with lettuce and tomato slices.

How to Jazz Up Canned Chicken Salad

Parmesan cheese is added to this chicken salad to give it more flavor, and the result is incredibly excellent. However, depending on what you have in your pantry, you might want to get inventive and add different tastes to it.

In addition to allowing me to use up ingredients that are almost gone but that I can’t quite throw away, I prefer to switch them up so that my kids don’t get tired of them.

You only need one or two more ingredients, and depending on what I add, I use anywhere from a quarter to a half cup in total. Try it out, and enjoy yourself.

My preferred mix-ins include the following:

  • cut grapes
  • Dehydrated cranberries
  • Pecans that have been lightly browned in a pan on your stove while shaking the pan (you’ll thank me for this tip).
  • Pepitas
  • sliced celery
  • wholesome mustard (just a tablespoon or so)
  • thinly sliced shallots
  • Garlic, green
  • pickles, chopped
  • green apple dice
  • Chopped Yellow or red pepper

Ingredients Canned Chicken Salad

  • 12.5-ounce can of chicken
  • 1/3 cup mayonnaise
  • 1/4 cup grated Parmesan
  • 3/4 teaspoon pepper

Instructions

  • Drain your chicken after opening it.
  • Add the chicken to the bowl along with the Parmesan, mayonnaise, and pepper.
  • Combine using a fork.
  • Serve right away with crackers, in a wrap, on a sandwich, etc.

Notes

You are welcome to add your own mix-ins, such as sliced grapes, chopped peppers, pepitas, and more, to further jazz up this dish.
