Ingredients
Pumpkin Waffles
- 2 ½ cups all-purpose flour
- ¼ cup packed brown sugar
- 4 teaspoons baking powder
- 2 teaspoons ground cinnamon
- 1 teaspoon ground allspice
- 1 teaspoon ground ginger
- ½ teaspoon salt
- 2 cups milk
- 1 cup canned pumpkin
- 4 eggs, separated
- ¼ cup butter, melted
Apple Cider Syrup
- ½ cup white sugar
- 1 tablespoon cornstarch
- 1 teaspoon ground cinnamon
- 1 cup apple cider
- 1 tablespoon lemon juice
- 2 tablespoons butter
Method of Pumpkin Waffles with Apple Cider Syrup
Step 1
As directed by the manufacturer, preheat a waffle iron.
Step 2
In a mixing bowl, mash together the following ingredients: salt, cinnamon, allspice, ginger, brown sugar, and flour. In another bowl, whisk the egg yolks, milk, and pumpkin together. Egg whites should be whisked until soft peaks form in a clean, dry bowl.
Step 3
Just combine the flour mixture with 1/4 cup of the melted butter before adding it to the pumpkin mixture. 1/3 of the egg whites should be carefully mixed into the batter using a rubber spatula or whisk. Add the remaining egg whites and combine. Waffles should be prepared according to the manufacturer’s directions.
Step 4
Creating the syrup In a saucepan, combine sugar, cornstarch, and cinnamon. Add apple cider and lemon juice and stir. Once the mixture starts to boil, cook it over medium heat until the syrup thickens. 2 tablespoons of butter should be stirred in until melted after being taken off the heat. Serve hot.
