How to Keep Chicken Enchiladas Fresh

For two to three days, keep any leftover chicken enchiladas in the fridge in an airtight container.

  • 1 tablespoon olive oil, or as needed
  • 4 skinless, boneless chicken breast halves
  • 1 onion, chopped
  • 1 ¾ cups shredded Cheddar cheese, divided
  • ½ pint sour cream
  • 1 tablespoon dried parsley
  • ½ teaspoon dried oregano
  • ½ teaspoon ground black pepper
  • 1 (15 ounce) can tomato sauce
  • ⅓ cup chopped green bell pepper
  • 1 clove garlic, minced
  • 1 tablespoon chili powder
  • ½ teaspoon salt (Optional)
  • ½ cup water (Optional)
  • 8 (10 inch) flour tortillas
  • 1 (12 ounce) jar taco sauce

Method of Chicken Enchiladas

Step 1

The oven should be preheated to 350 degrees F (175 degrees C).

Step 2

Over medium heat, warm oil in a nonstick skillet. Cook the chicken for 5 to 7 minutes on each side, or until the juices are clear and the chicken is no longer pink.

Step 3

Slice the chicken into cubes after transferring it to a cutting board. Put the chicken back in the skillet.

Step 4

Add the onion, sour cream, parsley, oregano, black pepper, and 1 cup of Cheddar cheese. Cook and whisk the cheese until it melts over low heat. Add the salt, garlic, green pepper, chili powder, and tomato sauce. If necessary, add water.

Step 5

Fill tortillas with the chicken mixture, then fold them into enchiladas. Place the enchiladas in a 9×13-inch baking dish seam side down. Add taco sauce and the final 3/4 cup of Cheddar cheese on top.

Step 6

For about 20 minutes, bake the dish uncovered in the preheated oven until the cheese has melted. Before serving, allow to cool briefly.
