It’s a well-worn cliché, but breakfast really is the most significant meal of the day since it provides you with the energy and food you need to face the remainder of the day. Generally speaking, though, there’s a considerable difference between what our morning cravings are and what will give us the nutrients we need most. Nevertheless, is there anything more fulfilling than a delicious breakfast sandwich? We doubt it, especially when we can chew in peace knowing that we’re kicking off the day with a healthy dosage of fiber and protein that will shock our metabolism.

Sadly, most diners and fast food companies are unable to select such a successful combination of components, causing the breakfast sandwich to become unduly high in calories and low in energy. However, we take more care while selecting the ingredients for this dish. Though pastrami and Swiss have historically only been seen at lunchtime deli counters, we believe that pastrami and soft scrambled eggs are a fantastic combination, especially considering how much less calories pastrami contains than either sausage or bacon.   • 1⁄2 Tbsp butter
  • 4 oz lean pastrami (or turkey pastrami), cut into strips
  • 6 eggs
  • 2 Tbsp milk
  • Salt and black pepper to taste
  • 4 slices low-fat Swiss cheese
  • 4 whole-wheat English muffins, lightly toasted

Method of Egg Sandwich With Pastrami and Swiss

Step 1

In a big, nonstick skillet set over medium heat, melt the butter. After adding, cook the pastrami for two to three minutes.Reduce the heat to a low setting.Beat the eggs with the milk and a couple of dashes of pepper and salt.Gently whisk and add to the pan.The eggs will continue to cook after they are taken off the stovetop, so use a wooden spoon to stir them frequently and scrape the bottom as they set…

Top each English muffin with a slice of Swiss cheese. Scrambled eggs should be divided among the muffins, topped with the muffin tops, and then served.

Tips

If you’re not a fan of pastrami, this may be made with any deli cut. Try some turkey, ham, or roast beef.
